I had the same issue when I received my Huawei Watch 2. I had to root with the help of the colleague and install English version. After few month I changed my google account password and was unable to update on watch 2. I had used without able sync with my phone for couple of months. Then I decided to factory reset it. And for my surprise it had asked me for language this time. It's working perfect now wit factory reset.
I would suggest you to do a factory reset and see If you are getting a language option or not at the start.
If not then try to get help with someone who understand Chinese to choose the options.
If not then try to install an APP on your phone that can Scan & Translate Chinese language by scan the language on your watch to see which option are you getting and if there is a language option there.
Lastly, ROOT it. Not legal and voids the warranty. Since I had no warranty locally I took the risk.
