In my opinion, different customer has different VLAN ID or MAC address, you can analyse these area to figure out where is the packet come from.

Suppose a customer is sending 1522 Bytes usually with a particular VLAN ID. But if the same customer sends me Jumbo frames can i separate it or control? Can i implement any restrictions on customers based on Jumbo frame transmission permission?

[Answer] 

For the Jumbo frame, it has a paticular type =Ox8870, there are two situations:

1. Without VLAN:

2. With VLAN:

So, you can specify the Jumbo frame from the type area, and if you want to control the Jumbo frame, you can set the MFL(port MTU) value to control it.
